Sliwkosky Knives makes knives of various styles. Regardless of their use, be it outdoor or kitchen, it produces knives according to its individual concept, design and material consistent with the intended purpose of each of them. In this way, products of very high quality and accuracy of workmanship are created. All work is done manually using machines adapted to his needs. Production stages, such as cutting the knife shape, hardening, grinding, sharpening, processing the material on the handle and holster, take place in his workshop. The final product is refined with its shape and color and is a solid tool for the future user.
Knives in set: Gyuto, Santoku, Petty x 3 and Cleaver
Gyuto, also known as the chef’s knife, with a total length of 353 mm and a blade of 210 mm. The basic work tool of every cook. Great for a variety of tasks: chopping, slicing or slicing. It has a fairly wide blade and a delicate curvature of the cutting edge, useful for chopping. Due to its dimensions, Gyuto is less suitable for precise work.
Santoku with Far East origins, hence its name as an Asian chef. Its total length is 323 mm and the blade length is 180 mm. Shorter than Gyuto but a bit wider. It has a straighter cutting edge line that is even more like a cleaver. Santoku is great for chopping, so it is eagerly used in vegan and vegetarian cuisine. Due to the greater width of the Santoku amphibian, it is perfect for transferring chopped products in their short way from the cutting board to the pan.
The 3 Petty knives are smaller and handier tools for portioning smaller products. The set includes 3 sizes of knives with total lengths: 295 mm, 250 mm and 220 mm and the corresponding blade lengths: 165 mm, 125 mm, 90 mm. Petty knives are very versatile in use. The larger Petty will successfully replace Gyuto when cutting and chopping products with not so impressive dimensions. Smaller ones with pointed tips will do more precise work. They will successfully separate meat from bones, even in hard-to-reach depressions, remove fruit seed nests, etc.
Cleaver is used for more demanding kitchen tasks. The cutting edges in the knives described above are quite thin in order to obtain the effects of maximum sharpness, which is of colossal importance in the kitchen. Thinner cutting edges are obviously more prone to damage or deformation. Hence, the set includes a cleaver for cutting cartilage and light bones. Cleaver, of course, is a very versatile knife. It will find its application during cutting, chopping, slicing, boning, etc.
AEB-L steel as an excellent compromise for everyday use
The knives, apart from the Cleaver, are made of AEB-L stainless steel. It is a corrosion-resistant steel, which is why it is eagerly used in the production of kitchen knives. This steel shows excellent sharpness and keeps sharpness quite well. It is steel that can be sharpened relatively easily, which is of great importance in the kitchen, especially when you need to quickly restore the sharpness of the knife while cooking in the kitchen. This steel has a fairly good impact strength, however, when using the entire set of knives, for more demanding tasks (cutting cartilage, thinner bones) we recommend a Cleaver, specially made for this occasion from BECUT steel. BECUT is a stainless steel with better impact strength and excellent corrosion resistance.
Stabilized wood handle
The handles are made of stabilized wood*. The wood used is a bog oak, dated and certified for the age of approx. 6000 years. It is an exclusive, naturally porous material with a beautiful longitudinal structure of the fibers and a unique shade. All handles have accessories made of stainless steel, depending on the type of knife it is: a ring or pins.
The handles of all knives, apart from the Cleaver, have a hidden tang construction. The design is comfortable for the hand and very durable.
The handle of the Cleaver has a full tang construction, which means that the steel runs through the entire width of the gripping part to which the cladding is attached. It is a very durable structure and it is justified in the cleaver used for more demanding tasks.
* Wood is a material of natural origin. In order to preserve its visual properties and to ensure long-term use, the knives should not be washed in the dishwasher.
Magnetic wooden stand
The set includes a wooden stand with magnetic holders for knives, made by the creator himself. The stand guarantees easy organization of work in the kitchen and helps to keep it clean. Stands with openings, often offered on the market, collect waste inside, which is not conducive to hygiene. This situation does not occur when we use a magnetic stand. The magnets in the stand are hidden and the places where they are are marked with discs made of the same swamp oak that was used in the handles of the knives. Hiding the magnets has the additional advantage that the blade grasped by the magnet sticks only to the wood, which does not scratch the amphibians, as could happen at the interface of raw steel and a magnet. The stand has been impregnated with a colorless wood oil **, which penetrates deep into the fibers, which makes it more resistant to moisture and creates a nice shiny coating.
** To improve the visual properties, we recommend refreshing the stand from time to time with colorless wood oil.
Optional leather pouch
Originally, the set includes a wooden stand. It is possible to replace the stand with a leather organizer, the so-called rallbag for all knives. It is a solution for chefs or people who travel with their equipment. The case is made of natural leather, foldable and closed with straps. The case has a handle for easy carrying. It’s very easy to organize your content. Each knife has its own compartment and the blade is secured with an additional sheet of leather covering it, which means that when rolled up, the blades do not bump against each other and thus do not damage.
